You just pick the ones you want, put them in a basket, and hand it to the counter person. They calculate your price and you watch them cook it. You can choose to add extra chilli pepper or not.

Stinky Tofu is a staple at many Taiwan night markets. Get yours deep fried with some nice cold pickled cabbage on top. You’ll be addicted.
Shawarma
This chicken Shawama stand is very popular and the price (40NT) hasn’t changed in years. The roasted chicken comes on a bun with some veggies and a mayonnaise sauce. They can be addicting.
Joy’s Cookies
Joy’s Cookies is a local Kaohsiung outfit owned a run by a Canadian
couple. If you are hankering for some good freshly made North American
cookies, seek them out. The lemon cookies and orange chocolate chip
cookies are tops on my list.
